Basis

The specification is the benchmark

Every article has a specification document. It sets out the recipe, process parameters, limit values, presentation and labelling. What is not in it is not released.

Test plan per article

Which characteristics are tested, when and how, is laid down in advance.

Analytics and sensory analysis

Laboratory values and structured tasting run in parallel with production.

Batch release

Only once the documentation is complete does a batch leave blocked status.
